A member of the Salmonidae family which, as its name suggests, includes salmon, trout is a semi-fatty fish whose lipid content varies depending on the time of year. Lowest in winter, the lipid content rises considerably from late spring to early fall. Foodies find that the fattier the trout, the finer the flavour.Surprise!
