Lowest in winter, the lipid content rises considerably from late spring to early fall. Foodies find that the fattier the trout, the finer the flavour.Surprise! Fatty trout also makes healthy eating because its fat contains omega-3 fatty acids with proven health benefits, reducing the risk of blood clots and helping prevent heart disease. Trout is an excellent source of vitamin B12 as well as omega-3 fatty acids and protein and provides appreciable amounts of phosphorus, magnesium, zinc, selenium and iron.
